Ti-ra-mi-su for fire crane
2 eggs, separated
40g sugar
250g mascarpone chees
200ml expresso
30ml coffee liqueur (cointreau/rum/brandy is fine)
savoiardi biscuits (lady fingers)
cocoa powder for dusting
1/ whisk egg yolk and sugar till thick and pale
2/ fold cheese in gently
3/ whisk egg white till soft peaks form (not too stiff)
4/ fold egg white into mixture (a very delicate process)
5/ combine express and liqueur in small bow
dip biscuits into coffee mixture (not completely soaked through) and
place across bottom of bowl
6/ cover with mascarpone mixture
7/ repeat layering
8/ refrigerate for 3 hours or longer (make sure it's properly covered, otherwise it dries up)
sprinkle with cocao powder just before serving

「我為你好咋！」朋友拍拍我膊頭：「就係知道呢個場d女仔唔掂，所以先特登帶你黎。老友，你就快結婚啦，呢d場岩你架啦，安全唔會咁易搞出事呀。」
聽罷，我向朋友爆左句粗，就轉身走左去。個場既質素雖然差，不過老友多少有d用心良苦，呢樣我都理解既。
我一個人悶爆咁坐響Bar檯前面，突然見到同我幾個身位之隔，有一張曾經好熟悉既面孔。
我望住眼前呢個女孩子，第一個反應係：嘩，同以前讀書既時候，真係冇變過。
其實撞見自己既Ex，最令人心動既地方，唔係個Ex比同你拍拖果陣黎個女大十八變，變更加得美豔動人，而係佢仲保持住當日同你拍拖時既果一份氣質。以前你為佢迷倒既原因，就正正因為呢一份感覺。響一個冇預期既情況之下，從新感受呢一份失落多年既攝人氣質，感覺，其實幾震撼。
「喂，你又會響度既？好耐冇見。」女孩子大概已經發現左我既目光，正當我諗緊好唔好埋去打聲招呼既時候，佢已經採取主動。

「都算托賴啦…」我話。畢業之後，其實時不時都有d舊同學既聚會。或者當年分手既時候，女孩子同我實在分開得太難睇啦，所以每次有舊同學聚會既時候，果d搞手都會自動波咁either淨係叫佢，或者淨係叫我出席，以避免尷尬。咁多年黎，一直如是。「呢幾年經濟好左，生意就好做些少囉。我地做生意，三更窮五更富，邊夠你地做專業人仕穩定呀…」

同女孩子分手之後，我其實曾經認真咁後悔過既。或者afterall呢個女孩子都唔會係我理想既太太，不過即使係分手，都應該分得得體一些。我會同自己講：算啦，果時大家年紀太細啦，唔識處理，所以先會搞到一鑊粥咁既遮。

「你兜個大圈讚自己遮…」我望左一望幅相，又望一望眼前呢個女孩子。其實某程度上，我覺得兩個女仔，響氣質上係有些少相似。畢竟人既品味同喜好，係有條路可以捉既。
傾左幾句，女孩子就有朋友拉左佢走啦。我曾經已為，分手之後如果有機會再見返面，應該係件好尷尬，好唔自在既事情。我曾經幻想過，假如我響條街度有一日撞返呢個女仔，我到抵應該點樣表現，同埋應該同佢講d乜野。
到事情真係發生既時候，原來一切都只係淡如水。

Music of Nicolai Medtner
The often-neglected Russian composer Nicolai Medtner (1880 - 1951) is making a come-back! After decades of Bach and Beethoven and Chopin, we feel the need to feed the musical public with a different kind of music that is equally effective and no less satisfying. Medtner's music is intellectually and emotionally profound - partly a reason why he has been neglected, and his compositional technique is truly unique. Audiences will hear an entirely inimitable voice of this late-romantic Russian - quite unlike his friend Sergei Rachmaninoff but at times sharing similar traits. Our repertoire will not be complete without Medtner's music!
Modern day champion of Medtner's music include Marc-André Hamelin, Geoffery Tozer, and Medtner himself. Not to forget a rare recording of Horowitz playing Op. 51 No. 3 and Heifetz's transcription of Op. 20 No. 1.
Programme will include piano, violin and vocal music, featuring first time vocalist Louise Kwong and violinist Sze-Long Wan, along with our two pianist-founders Ernest So and Fuk-Yin Koon.

30 hours in Mali--Yellow Fever
Yellow fever is a viral disease found in parts of Africa and South America. It is transmitted to humans by a mosquito bite.
My boss and I followed our Malien woman 'guide' to the hygiene control counter, actually there was no counter, instead a sign-board.All travelers were showing a yellow card to an old man in grayish white uniform, this bald man seemed to be a medical practitioner.
Knowing that we did not have the yellow card, when back in Hong Kong, i find out that it is the International Certificate of Vaccination, he led us to go into a room next to the passport control counter.
It was just 6sqm large, no windows, with two iron-made giant cupboards, like those at office and an old-styled office desk, which is hard to find at hk nor paris modern office.
He told us that we had to pay for the vaccinations, USD50/head, but finally we settled in French Franc. i thought that we could go, but he took out two jars of the cupboard, that kind of jar you can see in a grocery shop for selling biscuits in mainland china,both of lids were a little bit oxidized. One contained white cotton ball, but the colour was just the same as the uniform of the man, hard to say it was white. Another one contained pale yellowish fluid.
Oh my goodness, he was going to give us injections then. i was shaking, how come i could have it here with such adverse hygiene condition! i would not acquire Yellow Fever but maybe AIDS, Hepatitis B or whatever....
If i have to had it here, what i should do: turned around and took the next flight back to paris, even my boss did not agreed and the client was waiting outside.
What's more important than life!!!!!
Guessing that my boss would accept the vaccination, i was well-prepared to leave Bamako, though i could not persuade him to leave too and i would lose my job, but who cares!
I tried my best to calm down myself, in the least my voice was not shaken, long before he took out the syringe, i explained to him that we would be leaving tomorrow nite at 23h00 and would he be kind enough to let us go and we would still pay for the vaccinations.
at that moment, i didnt know that the vaccination should be taken 10-15 days before it come into effect, if i knew that, i would explain to him, but if he was some kind of medical practitioner, he should have known it.
He stopped his work. Thanks God! He understood my french and accepted our request. He told us that the sole responsibility lied on us.
Then we left the tiny room and procceeded to another room for the application of entry visa. It was rather cheap, just FRF50/head, and i met the french man sitting next to us, he had some problems too. A few minutes later, i saw an acquainted
face, our french client living in Abidjan, had come all the way to pick us up in Bamako. Finally i felt safe.
The woman was still 'looking after' us, ('elle s'occupe de nous') She led us to have our luggages checked and left the sous-douane area, we thanked her and my boss gave her 10000CFA, i.e. franc used in west africa, 1FRF=100CFA, and she was contented with it.

30 hours in Mali (article from emails to fds)
'Landing will be in five minutes.
It is 33C in Bamako.'
I've well prepared myself for landing in Bamako, Mali which was once a dark African empire extending from Mauritania, Senegal to Guinea in the 13th -14th Century. Starting from 1857, the French occupied the country, French is still the official language and this is why i was there.
Wearing layers of clothes to resist the chilly weather in Paris, I had to put it off one by one in the toilet where one could hardly move, luckily my siege was up-graded to business class due to overbooking. There was no queue outside, and I could take my time, like the French said 'prendre ton temps', of course, I was in an Air France aircraft A310. I had some champagne which was the only wine I would take in-flight. I felt hot already, because of the wine and most of all, the sun shining through the little window.
'Please remained seated until the aircraft has completely stopped'
It was 4.54pm but the sun was still burning the land which was called l'afrique noire. (dark Africa)
Going down the stairs, i arrived finally in Bamako, there was nothing,
more precisely, no facilities in the airport: no connecting bus, no boarding gate, but a man with a gun guarding the 'exit' of the staircase, gazing at you. Some Malien women were standing around the aircraft, welcoming their visitors. This scene should be seen on the arrival floor of an airport but here in Mali, things were out of our imaginations.
It was terribly hot but with its dryness, one could hardly sweat so you didn't feel too tough, but i could hardly breathe in my suits. We were walking to the main building 15m away, or say the only building. There were two queue, one for local resident, one for foreigner as usual, yet it was interesting to find that Malien were sitting on the bench in the passport control area (sous-douane), i wondered if they were having a siesta. They shouted to me to go to the counter for local resident in French. i hesitated and remained still. The others did so.
It's my boss turn. The officer said that he didn't have entry visa, neither nor i. We called the consulate of Mali in hong kong and we were told that it was not necessary for HKSAR passport holder.
i told him that 'ce n'est pas necessaire pour notre passeport'
(for our passport, it's not necessary. )
The French sitting next to me interferred. He explained to the officer that we went there for business and we would leave the next day. His effort was in vain. A fat woman in traditional Malien clothing approached us, she was quite active there as she never ceased to bring some passport for the officer to chop on.
We passed the passport control area, proceeded to the vaccination counter. Lining up in the queue, i knew what was wrong. We didn't have vaccinated neither. People were showing a yellow card. I'd checked in Hong Kong that vaccination for yellow fever is recommended but not a must.
Here, it is a must.

j'ai terminé ma journéeà l'hopital et je prend un peu de temps avant de rentrer àl'appartement pour t'écrire un mot.
Une grande tristesse à traverssé mon corps à la lecture de ta lettre.Je crois qu'il n'hesiste pas de mot pour soula ger une telle douleur. Je pense tres fort à toi et t'envoie toute mon amitiée et mon courage pour affronter cette epreuve injuste de la vie. Nouvelle de Maarten
Salut Carole,
Merci de ton long mail, ça me fait beaucoup de bien
d'avoir un peu de tes nouvelles. C'est vrai qu'on a
pas de chances, mais c'est aussi parce que je ne donne
pas assez de mes nouvelles...
Ça me fais plaisir aussi que tu as rencontré quelqu'un
qui te plait. J'espère que les choses vont s'arranger.
Ici moi aussi j'ai un petit ami, mais je ne sais pas
combien de temps ça va durer parce qu'on n'a pas les
même priorités. Mais sinon il est super gentil, on
passe beaucoup de temps ensemble.
En dehors de tout ça, je vais bien. Barcelone me plait
beaucoup, j'ai mes amis ici et à partir de la semaine
prochaine un nouveau travail. Ce n'est pas super (je
dois travailler les weekends et la nuit) mais pour
l'Espagne (qui est quand même un pays plus pauvre et
arriéré par rapport au reste de l'Europe), ils payent
très bien. En Hollande ce ne serait rien du tout, mais
bon.
Robert va bien. La dernière fois que j'ai eu de ses
nouvelles était cet été. Il est au Canada
effectivement et il enseigne, je crois. Sinon, lui il
a pas de petit ami. Pas de quoi être jaloux ;-)
Bon, si jamais tu es près d'ici et t'as l'occasion, ce
serait super cool si tu passes. Sinon, elle est
comment ta vie là-bas? Tu voyages toujours autant? Et
ton frère et ta soeur vont comment?

Une lettre a Maarten
Bonjour Maarten,
Aujourd'hui je suis tres hereuse de t'ecrire une lettre........ oh la la notre cliche, quoi!
J'ai faille a te voir a Barcelone cette semaine. Je me suis rentree chez moi apres le salon MCB a Paris et je m'en vais demain. C'est bien dommage que je ne sache pas que to,i tu y etais au mois de fevrier. On n'a pas eu de chances de tout. Tu sais, tu me manques bcp bcp.
Ces annees j'ai revu Silke et Sandrine. La premiere, elle s'est mariee il y a 2 ans et m'a envoye une carte postale de Venezia et la derniere, elle a justement demanage le jour de mon anniversaire. Elle va donner sa 2eme bebe. Robert est bien au Canada et j'ai pas recu son message depuis longtemps.
Hier soir, j'ai parle de toi avec un francais/italien et il est tres jaloux de toi. Et voila. Je lui ai dit que la jalouse peut bien le tuer. C'est la 3eme fois que je lui ai croise. Je sais pas si ca va marher - lui, non plus. Avant mon depart, il ne me lache pas et me demande si je peux debrouiller la bas. Si oui, il voulait que je reste avec lui.
De mon cote, j'aime bien qu'il vienne. De fait qu'il parle que le francais lui perpertube a s'installer ici. Il va me voir en Novembre et je te dirai comment ca sera.
A la prochaine. Je t'embrasse tres fort.

Café Parlez! - Comment on peut apprécier le jade
Il y a un mois, je suis allee au Cafe Parlez de FAA.
This is an eye-opening experience.
According to Jacky, the host of Cafe Parlez, the Chinese refers the term Jade to quite a large variety of gemstone especially when we talk about "古玉".
To him, Jade means Jadeite, a mineral with composition NaAlSi2O6 excluding Nephrite from the Jade family. When we turn the pages of the catalog of the auction company, we can read the name Jadeite. This is quite different from what we know but Jadeite is really a beauty.
I just love to those with a high degree of translucence and it is called 冰種.

Spain is a plurinational, pluricultural and plurilingual country where 4 offiical languages coexist: Spanish (Castilian), Basque (Euskera), Galician and Catalan, Catalonia:s own language. Overall, the Catalan language is spoken in a territory of 68000 sq km inhabited by almost 11 millon ppl (in Roussillon, the Valencia area, of course, Catalonia itself.) It is a Romance language which, like Spanish, arose from the dissolution of Laint btw the 8th and 10th centuries. Under the Franco regime (1939-1975), the Catalan language was persecuted and it was forbidden to teach it in the schools. However, it endured thanks to its family tranmission. Nowadays, Catalan is taught at school.

有violin & piano sonata,
也有flute跟piano的fantasie
仲有慘不忍睹的string quartet
當中有二首歌仔, vocalist娓娓道來
在太空館這個狹窄的場地,真正做到盈繞的效果

WTO vs NGO -- extracted from email to a friend in Japan
Let's get back to WTO. There are some volunteers but our part is paid. The gov't recruited around 200 French/Spanish language helper as these are the official languages of WTO.
It only lasted for six days so it didn't affect me much and I was quite free after I shifted from the main reception desk of the WTO secretariat to NGO computer centre. We spent a lot of time chatting with the NGO guys and the protestion specialists were much warm-welcomed than the president of WTO.
One day, the president, Mr Pascal Lamy, was in front of our desk and we were chatting. No one asked him for photo but when Mr Jose Bove was here, even the gov't officer asked me to take pictures for them and that's why I can send you the photo. They were taken by the officer with their camera.
Frankly, I wanna know more French speaking ppl and join their activities but it turned out I knew more Spanish speaking ppl and made friend with them.
An open party was organised during the Chinese New Year from a HK guy who had lived in France for 10 years and I did have a nice chat with him when he shifted his duty from the conference room to NGO centre. And that's the only French speaking guy I know from WTO.
My friend working in conference room had a better luck as their group was larger and their duty was much 'shifted' so he could have the chance to meet more ppl and made friend with them.
Anyway, it's a very good chance for me. It really doesnt matter whether I can make friend with french or spanish speaking ppl. Yet it is agreed that Spanish speaking ppl are very united here in HK. They have a very strong link and a sense of belongings. While the french are really very individual, very french enough.

Eh, oui! C'est lui. C'est le Monsieur Hong Kong 2006. Je m'en souviens finalement.
C'est vraiment curieux. Je suis justement une etrangere la bas invitee par la VP de patronage de ce programme, The Apprentice. J'en ai profite de m'asseoir sur la premiere rang et surtout, Francois s'est assis a cote de moi, pas Michael ni Heidi parmi les quatres artistes.
Je ne lui ai parle qu'un mot: felicitation pour gagner les jeux a la fin de cette conference de presse. Il a apercu que je suis francophone et nous avons commence notre conversation.
Il vient de Paris 94 et il est venu a HK depuis 3 mois. Hong Kong, Ca lui plait bcp. Il est un-t-peu stupefait avec mon francais. C'est rare que on le parle courament ici a Hong Kong. Mon probleme, c'est pas bien articuler..................Pour quelqu'un dont le cerveau marche plus vite que les levres, on ne peut pas le trop demande. Quelle excuse!
Malheuresement, j'ai oublie ma carte de visite. Il est tres jeune quand meme. Dommage, n'est-ce pas?

Jose Bove
法國客戶日前skype我, 告知我們在WTO遇見的Jose BOVE參選總統.
她還在我的生日禮物中附上這消息的剪報, 給我當作紀念
另我跟一位在香港的法國客戶提起這事, 他"GIT(1)"一聲笑出來, 還道我跟他開玩笑.
這件事對一個香港人看來無關痛癢, 卻推使我開始認真地寫Blog.
